Our product processing

The processing process begins at our collection centers, where experienced pickers bring in the fresh, quality mushrooms and berries they have found on the day. Within hours, refrigerated vehicles transfer the cleaned and sorted harvest to our plants. Here, the expertise and passion of our workers, combined with state-of-the-art technology, allow us to naturally preserve the products to best enhance their quality.

Cleaning and processing

Freshly harvested produce must be cleaned and processed as soon as it arrives from the collection centers. During this first stage, qualified lab personnel perform cleaning operations and an initial manual sorting, followed by instrumental inspection (by metal detector) to ensure the total absence of foreign bodies. It is essential to ensure the quality and freshness of both mushrooms and berries throughout the processing and preservation phases of these delicate products.

Sorting

Once the fully cleaned and washed produce has been obtained, our experts will begin sorting it.

Berries

Berries are sorted in the aero refrigerated processing rooms by means of the conveyor belt, which ends in the freezing tunnel. Under the careful inspection of our workers, fruits that are damaged or do not conform to market standards are eliminated.

Mushrooms

As for mushrooms, young and good-sized specimens will be distributed in wooden boxes and sent overnight to fruit and vegetable markets where they will be sold as fresh produce. Mushrooms that are too large will be sent to laboratories where they will be diced and then, together with the smaller mushrooms, will be placed in refrigerated cells where the cold chain route will begin for them. Medium-sized products, on the other hand, will follow a different process; they will be placed on a belt and sent to the mechanical cutter that will reduce them to 2mm thick slices and then be dried.

Blast chillers and cold storage

Fast freezing ensures that the organoleptic properties of foods are preserved.

Berries

As soon as the cleaning and initial processing are finished, the berries are sent to the spiral blast chillers where they will be quickly brought to a temperature below -18°, guaranteeing perfect preservation.

Mushrooms

As we saw above, mushrooms that are too large are placed on a belt and diced. At the end of the operation the product is sent to a spiral blast chiller capable of freezing 1500kg/h bringing the temperature to -38°. Subsequently, the bagged product is deposited in special cells where the temperature remains fixed at -25°, guaranteeing the preservation of the frozen food.
